Spicy Beef & Italian Sausage Ravioli with Sweet Potato Cream Sauce: Monday

Spicy Beef & Italian Sausage Ravioli
w/ Sweet Potato Cream Sauce

Pre-Packaged Ravioli
(I used a Refrigerator “fresh” prepared Ravioli)
1 Sweet Potato (oven roasted)
1/2 cup Chicken Stock
4 tbsp Butter
1 cup Cream or Half & Half
1 tsp Pumpkin Pie Spice
1 tsp Red Pepper Flake
Salt & Pepper to taste


Preheat oven to 400° f.
Split 1 Sweet Potato in half, douse with olive oil and place cut side down on baking sheet.
oven Roast the Sweet Potato for 20-30 minutes or until softened and caramelized.
When Sweet Potato is done, remove from oven and set aside.

Prepare Ravioli per package directions. *Remember to use Salted Water .

Prepare the Sauce: place in a medium saucepan the butter and the cream.
Heat on Medium high heat until bubbles start at the outer edges.
When you start to see bubbles lower heat to medium / medium low.
Add Sweet Potato Meat to cream. Combine with a whisk, so that potato is pureed and creamed into “sauce”.
Add Butter, Spices & Stock to sauce. Combine well. Check consistency. Taste for flavor. Does it need salt & pepper?
Is the consistency to thick? If so, add some pasta water. The sauce should have some texture. Like a very smooth puree.
Pour Sauce over prepared Ravioli and Serve.

Serve with Crusty Bread and Side Salad. (Coupon for Ravioli)
