Spring Sneak Peek: Asparagus Pasta Salad

Hey Everyone! Here's the Asparagus Pasta Salad I promised!

So Easy.. it's ready 1-2-3 !

Cook whatever Pasta you'd like
(I used Penne)

Prep Fresh Asparagus
(break off woody ends and chop in thirds.)

Blanch the Fresh Asparagus in boiling water with salt and lemon.
(They are plentiful in the market right now.)

Blanch for 3-5 minutes,
(whenever they become bright green.)
Drop them in an ice cold bath to shock.
Leave in ice water for a minute or so until completely cooled and so they will stop cooking.

Pour 1/4 - 1/2 cup "Marie's Cole Slaw Dressing" into the bottom of a mixing bowl. Amount depends on the amount of pasta and asparagus you have cooked.
I used a 1/4 cup for 1/4 pound Penne and it was perfect!
Drop in Pasta & Asparagus.
Toss lightly.

Let cool in fridge for a least an hour.

May be served with shavings of fresh parm.

If you'd like to serve it as a nice Lunch add some thin slices of Proscuitto and Parmesan Cheese slivers Yum!
