Throwing together Dinner

Having a rough week? Need an easy dinner recipe? How about a "Throw Together Dinner"?
You know when you have a bunch of ingredient in the fridge or cabinet and you put together your own little Chopped Challenge? Sometimes that's all we need to get a Great meal on the table!

Chicken and Dumplings

For an Easy Weeknight Meal

Made a Quick and Easy Chicken and Dumplings the other night thought I'd share it with you!

Chicken and Dumpling http://foodisloverecipes.comBoned a Rotisserie Chicken from the market.
Shredded the chicken, set it aside.

Heated some Olive Oil to the bottom of a stock pot, added chopped onion, celery and carrots.
Once the onions were translucent I added the chicken, sauteed for 1 to 1 1/2 mins max. 
(don't need color it's already cooked)
Added 4 cups Low Sodium Chicken Stock.
Brought it to a boil.
Lowered to simmer.
In a mixing bowl I combined Bisquick and Milk according to pkg directions for (biscuits)
Dropped Tablespoons of dough into the hot stock, covered and simmered for 10 minutes.

While the "Dumplings" were cooking I made a batch of White Gravy.
Equal parts Flour and Butter combined, then added to Simmering 2 cups cream.
Whisk vigorously. Remove from heat when it starts to thicken.
Add Salt and Pepper to taste.

Served chicken with dumplings and poured gravy over top!
It's not Mama's Best but it sure was EASY and Soooooo Comforting Good!
