Have you ever made something that was so good that you couldn't get it off your mind?
I made the Lemon Coconut Tarts yesterday and they were soo good that I was gitty with possibility for variations. My mind just kept going and going...So Last night I finally gave in to Orange Chocolate Custard Tartlets.
Oh my gosssssshhhhh. more than I could have ever hoped for. The bright orange essence cuts through the heaviness of the chocolate. The smooth velvety texture of a custard gives your mouth the pleasure of chocolate pudding you can eat with your hands...I love cooking! This is why.
Orange Chocolate Custard Tartlets
Ingredients:
*3 Eggs plus one yolk
(If you use extra Large eggs omit the extra yolk)
*1 1/2 C Sugar
*3 Tblsp butter (melted)
*2 C Milk (pref whole)
*3 Tblsp Orange Zest ( 1 sm orange)
*3/4 C Flour (sifted)
*8 oz Chocolate Melted (pref dark or bittersweet)
Preheat oven to 325f
Prepare Muffin Tins with Baking Spray. Spray liberally.
In Blender:
Combine, Eggs, Sugar and Milk. (blend)
Add Butter.
Whip until frothy.
Add Chocolate.
Blend well.
Add Orange Zest
Combine.
Add Flour (blend for 30 seconds minimum)
Mixture will be thin.
Pour Mixture into each prepared muffin tin to 3/4 filled.
Bake @ 325 for 35 minutes. No longer.
Remove from oven and move from pan to cooling rack immediately.
If using Cupcake Tin recipe yields 18.
If using Mini Muffin Tin yield is 36

Lemon Coconut Tarts...a light Spring nosh.
Sometimes I get bogged down with the traditional way a recipe is prepared and don't play with my food. Today was different. Today I decided that Lemon was the addition to this little tart I needed to brighten up a traditional recipe. I also had a little coconut hanging around and said, Why not?!? Why not, indeed!
Hope you love it as much as I do!
Lemon Coconut Tarts
Ingredients:
3 Eggs plus one yolk. (If you use extra Large eggs omit the extra yolk)
1 1/2 C Sugar
3 Tblsp butter (melted)
1 1/2 C Milk (pref whole)
1/2 C Coconut Milk (may use All whole milk if coconut milk unavailable)
1 Tblsp Lemon Zest (1 lemon worth)
3/4 C AP Flour (sifted)
7 oz Shredded Coconut (set aside 2 Tblsp for muffin tops)
Preheat oven to 325f
Prepare Muffin Tins with Baking Spray. Spray liberally.
In Blender:
Combine, Eggs, Sugar and Milks. (blend)
Add Butter.
Whip until frothy.
Add Lemon Zest
Combine.
Add Flour & Coconut (blend for 30 seconds min)
Mixture will be thin.
Pour Mixture into each prepared muffin tin to 3/4 filled.
Top with scant amt coconut
Bake @ 325 for 35 minutes. No longer.
Remove from oven and move from pan to cooling rack immediately.
If using Cupcake Tin recipe yields 24.
If using Mini Muffin Tin yield is 48
Serve as is or glaze with Lemon Glaze
Lemon Glaze:
3 cups Confectioners Sugar
2 Tblsp Lemon Juice
2 Tblps Milk
Combine well
Dip tarts into glaze and allow to dry on cooling rack.

Portuguese Braised Favas
An enchanting recipe steeped in tradition in my family is Favas. It is a little bean (actually big bean) that is lovingly braised for hours and hours in an Azorean customary marinade. This marinade is the base for thousands of Azorean dishes.
Vinho de Alhos is a delightful and smart combination of spice, acid, and olive oil that can compliment anything from a heavy Pot Roast to the lightest of Cod Fish. It's a cook's "liquid gold".
Vinho de Alhos consists of a few tablespoons of a good olive oil (portuguese or spanish). One with a very fragrant tone. To that you add minced or chopped onion and garlic (depending on the texture of the dish), a tsp or so of Saffroa (portuguese equivalent of saffron. Extracted from Safflowers, instead of crocus) a tablespoon or so of apple cider vinegar. The combination of the sweet from the apple and the acid of the vinegar permeates the protein and breaks it down to tender, but doesn't macerate to where it's bitter. The Pièce de résistance ingredient is a wet red hot pepper marmalade or paste called "pimenta moída". This is Vinho de Alhos.
The combination of flavors when sauteeing in a pan will automatically send you to an Azorean seaside.
Once you have mastered Vinho de Alhos. You can master almost any Portuguese (Azorean) dish. Let's make Braised Favas!
Braised Favas
Ingredients:
1 lb Dried or Fresh Fava Beans
3 tblsp Olive Oil
1/4 lb Chourico diced (optional)
1 Onion (yellow, halved and sliced)
3 Garlic cloves (chopped)
1 tsp Pimenta Muida (may sub 1 tsp dry red pepper flakes)
1 tsp Saffroa (may sub Paprika or 1/2 amt of Saffron)
1 Tblsp Tomato Paste
Salt & Pepper to taste
2 cups Chicken Stock
2 cups Red Wine
Instructions:
If using Dry Favas: Soak favas in water overnight before braising.
If using Fresh Favas: Peel and remove outer shell revealing whole beans.
On day of preparation:
Heat 3 Tblsp Olive Oil in Large Dutch Oven.
Add chourico.
Saute chourico, until golden brown and renderings release their flavor.
Remove chourico, set aside.
Add onion. Saute until translucent.
Add garlic, pimenta muida, vinegar and saffroa.
Stir until combined.
Add back chourico.
Add favas.
Saute until favas well seasoned.
Add Wine.
Scrape bottom of pan to deglaze.
Add tomato paste. Stir until combined.
Add Chicken Stock.
Cover and Braise for 3 hours, or until beans are tender.
As liquid evaporates, add 2 cups of water to maintain liquid level.
The finished product is a fantastic side dish or buffet nosh. You can even add it to a catering menu as a very Rustic Appetizer. It is served with a crusty bread as seen above. Absolutely delicious! Comfort Food Heaven!

Summer Food Favorites!
My dear friend Rich Fletcher decided he couldn't decide. Rich is such a wonderful cook and has a fantastic repertoire of recipes that when it comes to deciding on just one it is an impossible task. I have to agree with him. He is a phenomenal cook and photographer! He not only can cook his butt off... but the photos alone will have you salivating and reproducing his recipes in a heartbeat!
I introduce you too Rich Fletcher of Rich Fletcher's Good Food Revolution:
As I said he is a great cook, a fantastic photographer and ultra supportive friend! Rich surely knows the idea of Winter Blues. He lives in a Frozen Tundra. Canada!
His Photo Blog never ceases to astound! How a person that is so Deep in the frozen flurries can continue to provide his readers with Fresh, Wholesome, Locally obtained ingredient driven recipes is bewildering to me.
Rich's idea of a trip to grocery is a Daytrip to a wondrous land! As a foodie I so love Rich's shopping days. He always comes home with a story and an ingredient or two that will get the curiosity factor going.
So when Rich decided not to decide on what to submit to the Party..he gave a compilation of dishes sure to please. Just one example would be the jaw breaker, juice dripping 1/2 lb Home Burgers Rich is famous for!

New England and all of the Northeast corridor U.S. have experienced a Winter like no other. Thus my idea for the Winter Revolt. A wonderful Connecticut Couple took me up on this Revolt and dove in with vigor!
They had a BBQ in the Kitchen! Complete with Corn on the Cob, Watermelon and Spiked Lemonade!

Fresh is the Word of the Day!
In my most recent traveling within the Blogosphere, I have come about a Blog that intrigued me. The author is an(on the cusp) 30 year old young woman who describes her blog as a diary of her journey toward a 100% Raw Diet. She admits although at this time she is "100% Vegan. 60% Raw. 0% Cooking Experience"
Zenobia Sethna is a delightful woman who is boldy honest about her experiments in the kitchen and out.
She tells that she comes from a "non vegetarian" household and that she has always had an "uneasy" relationship with meat. While a confirmed 100% Vegan, she is now exploring the "Raw" revolution. Her take on this comes from research, documentaries and her admitted lack of "cooking" experience.
"Rawk Me", (Raw Girl in Mumbai) Zenobia's Blog, is a light and refreshing blog on a new discovery of Food in its natural state.
I was very impressed with the ability to combine, herbs, oils and spices to only enhance the natural flavor of the food.
Zenobia does cook, but her natural preparations are to die for!
Pictured here is one of her Blog's offerings that takes a grocery store staple and reminds us of where the idea originates!.
Homemade Sun Dried Tomatoes. Zenobia gives us a simple recipe, yet she provides us with the confidence to "do it ourselves". A lovely take on a common ingredient in my pantry, as well as I'm sure in many of my readers.

I originally contacted Zenobia because I received an inbox post @ Foodbuzz for a "Carpaccio of Pineapple". I was again, intrigued. I love her "No Nonsense" attitude toward a Phenomenally Flavorful yet simple idea.
The definition of Carpaccio is "thinly sliced or pounded" usually meats or fish served as an appetizer. Her idea for this became Fresh Succulent Pineapple! I was blown away just at the thought of the recipe.
My jowls began to salivate at the site of it! I knew for sure this Needed to be a Summer in the Kitchen , Winter Revolution Recipe!
Again Fantastic!
This is a mouthwatering, delightful way of integrating a Fresh ingredient into an everyday meal.
Pineapple, dressed with Olive oil and Vanilla!! Brilliant!

A Picnic on the Kitchen Floor
I received the most wonderful Twitter message from a young lady, her name is Amber. In essence she said that she had seen my post about the "Summer in the Kitchen Party" and was inspired.
I looked into this young lady and found her to be balancing College, Work and a Relationship. If you stop by her Blog or view her Profile on Blogger you will find a sweet young 20 something who shares her world for all to see. Sorority, Religion and best of all, Her Engagement to her "Best Friend".
Can I tell you how impressed I was? Amber is the quintessential 2011 Woman of today. Yet she is honest and humble enough to share her struggles within that balance for all to see on her blog. (Sweet Life as a Wife). Amber is also honest enough to share her faith with the world and bold enough to let everyone know that it is in this faith that she gets her strength and sometimes a little conflict. To view Amber's struggles and triumphs is to know a wonderful little chamber of the everyday Modern woman. I am proud to have become a Fan of Amber and hope that you will too!
Amber chose to take advantage of her indoor surroundings. She chose to have a picnic in her kitchen! What an inspired idea! She had a Picnic on her Kitchen Floor. Unpretentious, romantic and full of the Summer energy I so wanted to inspire.
She shares her recipe for Eggs in Purgatory a recipe she touts as "a sinful drool". I have to agree. Amber chose to make a sandwich from this delectable Entree. A innovative way to serve a fiery treat. Amber admits on her blog that the dish was so tempting she "burnt her mouth" on the first bite!

Love that it only makes 2 Waffles. It's just the right size to keep on the counter as it stands for easy storage.The Green Light indicator makes it easy to know when the exact right time to pour the batter in. Very Easy cleanup Love it!

Are you tired of Winter Yet?
Have you had enough Snow yet?
Do you have Cabin Fever???
I have the answer!
Even though I live in Florida, where the temp is currently 82 degrees, I feel for those who are currently suffering through the doldrums of Winter's Cold Blast. The never ending cloudy skies. The bitter cold that runs straight down to your bones. I remember it. I remember how long Winter was. I remember how tough it was to feel hope for the warmth of the bright sunshiney day.
So want to hear my idea?
Here ya go:
My idea is simple.
You are invited to a revolution. You are invited to have Summer in your kitchen!
As winter continues to trudge on you.. Fight back! Get out the Summer Wear!
Grab some Colorful Shorts and Tees. A grass Skirt, or a Hula Shirt.
Cover the Windows and Doors so the Snow doesn't shine in.
Have Summer in Your Kitchen! Heres how it should go:
1. Decorate with a Summer theme...This can be anything from colorful tableclothes to Beachballs .This is suppose to be fun! We're Revolting against Winter!
2 Plan the Menu: Hamburgers and Hot dogs, Ribs, BBQ Chicken, Potato Salad, Macaroni Salad, Have a Clam boil! Who ever said you cant do a clam boil in the winter? Jello Fruit Salad! Potatoes and Macaroni are available year long too! You can do this!
3. MUSIC... Let the Summer in.. Some Beach Boys, Bob Marley.. Some Tropical Sounds.. This will bring you straight to the beach!
4. Pictures! This is where the Participation begins. I wants Photos. I want to see what you do! I'm going to do it too! Just because it's 80 here, doesn't mean it's summer..But I'm making Summer in my Kitchen too!

Hint of Spring...Eggplant Parmigiana

I Love Eggplant can you tell? I know it's only February.. but the thought of a soft, sweet bit of Eggplant just warms my tummy. This weekend I visited my favorite farm stand and I found some beautiful Eggplant.
I had to add it to my week's Menu. I do a big shopping every two weeks. I plan each meal and include it on my list to shop for, but this week I had a side step. EGGPLANT.
An easy hearty, meatless meal that satisfies every little Italian hankering you could possibly have.
Eggplant Parmigiana
Ingredients
2 lbs Eggplant (sliced)
2 Cups Bread Crumbs
1 1/2 C Parmesan cheese
2 Tblsp Basil (chopped)
2 Tblsp Oregano (chopped)
2 Tblsp Garlic (powder)
Salt and Pepper
3 Eggs (beaten)
1/4 C Water
4 C Marinara Sauce
3 Cups Mozarella shredded
2 Cups Vegetable Oil
Marinara
In Medium Sauce pan, Warm 1 Tbslp Olive Oil , Tblsp Onion chopped, Tblsp Garlic chopped.
Saute until Onion translucent.
Add 1 10 oz Can Crushed Tomatoes
Add 1 15 oz Can Tomato Sauce
Bring to boil.
Lower to medium Heat.
Add 1 Tblsp Basil (chopped)
Add 1 Tbslp Oregano (chopped)
Add 1 tsp Red crushed pepper
Add 1 Tblsp Sugar
Simmer 30 mins.
Taste, add salt and pepper to desired flavor.
Directions:
Slice Eggplant in rounds
Set up 2 bowls for Dredging.
In Bowl 1: Place Bread Crumbs, 1/2 C Parmesan Cheese, Basil Oregano Garlic Powder and Salt Pepper. Combine all ingredients until spices well incorporated.
In Bowl 2: Beat 3 eggs and 1/4 c Water.
Dip Eggplant Slices into Egg wash, then into Bread Crumb Mixture.
Set aside.

In Large Saute Pan warm 1 1/2 C Vegetable Oil.
When Oil is warm enough for frying, (slight smoke),
place Dredged Eggplant in pan.
Fry until golden Brown.
When Eggplant is Golden Brown, remove from pan, drain on paper towel.
Layering
In a Baking Dish place, 1/2 C Marinara.
Add a Single layer of Eggplant.
Cover Eggplant with Marinara
Cover Marinara with Mozarella and Parmigiana.
Repeat Layers until end of eggplant.
For Top Layer cover contents of dish with Mozzarella and Parmesan.
Bake @ 375 for 40 minutes or until cheese is melted and Marinara bubbling.
The result is a wonderful Meatless Italian Entree.
